Scheme for The Waterside Inn, Bray, Installation of 55 Bronze sculptures, 2023
Inspired by the 3 Michelin Star restaurant's menu, mixed groups of botanical works were conceived and cast in bronze for each table within the space. Squashes, cep and porcini mushrooms; samphire, artichokes and garlics joined lobster, crab, and asparagus; tomatoes and figs alongside other fruit collections. The works respond to the 'centring' and celebration of a single ingredient within each Roux dish, mirroring the approach as physical specimens within the space. The commission timed to the restaurant's 50th Anniversary and interior redesign.
