Scheme for The Waterside Inn, Bray, Installation of 55 Bronze sculptures, 2023

Inspired by the 3 Michelin Star restaurant's menu, mixed groups of botanical works were conceived and cast in bronze for each table within the space. Squashes, Cep and porcini mushrooms, samphire, artichokes and garlics joined lobster, crab, and asparagus, alongside a mixture of fruit collections. The works respond to the 'centring' and celebration of a single ingredient within each Roux dish, mirroring the approach as physical specimens within the space. The commission timed to the restaurant's 50th Anniversary and interior redesign.
